Vegan Birria Tacos with Mushroom Filling

Ingredients

  • 1-2 Lb King Oyster mushrooms
  • 6-8 Flour or Corn Tortillas
  • 1 cup vegan shredded cheese
  • Cilantro or parsley and onion to top

Marinate

  • 1/3 cup Olive oil
  • 1 tsp Black Pepper
  • 1/2 tsp Salt
  • 1/2 tsp Cayenne Pepper
  • 1 Tbsp Fajita Seasoning Powder
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/3 cup Liquid Smoke or Tamari/ Soy sauce
  • 3 tbsp Tomato paste
  • 1/3 cup water

Preparation

  1. Mix all marinate ingredients together to create the marinade

  2. Coat the king oyster mushrooms with the marinade and let sit for marinating

  3. Cook the marinated mushrooms until tender and flavorful

  4. Heat the tortillas and add vegan shredded cheese and cooked mushrooms

  5. Top with cilantro or parsley and onion, then serve immediately
