Vegan Tofu Tikka Skewers

Ingredients

  • 400g extra firm tofu
  • 1 cup vegan yogurt
  • 2 Tbsp lemon juice
  • 1 Tsp salt
  • 1 Tbsp cumin
  • 1 Tbsp ground coriander
  • 2 Tsp cayenne pepper
  • 2 Tsp ground ginger

Preparation

  1. Press the tofu to remove excess water

  2. Cut the tofu into cubes for skewering

  3. In a bowl, mix vegan yogurt, lemon juice, salt, cumin, ground coriander, cayenne pepper, and ground ginger to create a marinade

  4. Add the tofu cubes to the marinade and refrigerate for at least 30 minutes to allow flavors to infuse

  5. Thread the marinated tofu onto skewers

  6. Grill the skewers over medium heat until golden and slightly charred, turning occasionally, for about 10-15 minutes
