Breakfast tacos

Ingredients

  • sweet potato cubes
  • 1/2 small onion, chopped
  • black beans
  • avocado
  • egg (optional)
  • taco seasoning
  • cilantro
  • corn tortillas

Preparation

  1. In a small pan, heat up some avocado oil and sautee the onions until fragrant

  2. Add in your sweet potatoes (mine were already roasted from the day before so I just had to heat them back up!), black beans, and taco seasoning and toss until warm

  3. Add an egg (if you want! I just didn't have that many black beans and needed some more food lol) and cook until whites are firm but yolk is still soft

  4. Turn off heat and remove from stove

  5. Top with avocado ? slices, fresh cilantro, and some crushed red pepper

  6. Heat up some corn tortillas in the oven and enjoy this meal right out of the skillet! ? keeps your food warm and one less dish you have to wash
