Hearty Latin Style Stew
Ingredients
- 1-2 tsp olive oil
- 1/4 medium red onion, diced
- 1/2 cup mushrooms, sliced
- 3 cloves garlic, minced
- 2 tsp sazon (I used @eatloisa)
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp thyme
- 1 cup crushed tomatoes
- 1, 15 oz can of white beans
- 1, 15 oz can of black beans
- 1 cup dry soy curls
- 1 tbsp almond butter or tahini
- 2 cups vegetable broth
- Juice of one large lime
- Salt to taste
Preparation
Heat up your oil in a large pan and begin to cook your onions and mushrooms until they begin to soften.
Sprinkle with a pinch of salt and then stir in the garlic, sauteing until fragrant.
Add in your sazon, paprika, cumin, and thyme, making sure to give a good stir to combine.
Mix in the crushed tomatoes and cook with the spices for about 2 minutes.
Add in the beans, soy curls, almond butter and vegetable broth.
Stir well to combine and then bring mixture to a low simmer, cover with a lid and cook for about 10-15 minutes allowing the soy curls to soften and the stew to thicken.
At the very end of cooking, remove from heat and stir in your lime juice.
Serve with extra wedges of lime if desired.
Notes
If you do not have soy curls, you can omit them and reduce the vegetable broth to 1 cup.
Serve this as is or with rice, greens, and extra herbs.
