Ingredients

  • 1 pound dried pinto beans
  • 4-6 cups water
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tbl olive oil
  • 1 tbl paprika
  • 1 tbl cumin
  • 1 tsp salt

Preparation

  1. You can put this together in a lot of ways

  2. I cooked the beans in my @instantpotofficial on high for 20 min, drained, then cooked in a pot with the other ingredients

  3. However, you could soak the beans overnight and boil for an hour

  4. However you get the beans cooked the process is similar

  5. Mince the garlic and onion and saute with the oil until the onion is lightly browned

  6. Add in the cooked beans with the other ingredients along with 4 cups water

  7. Heat until bubbling, mix and mash with a heavy spoon, turn heat down to low and stop stirring

  8. Cook for 30-60 min

  9. Add more water as needed for desired consistency

  10. Got some nooch? Stir in a tbl or two for more umami and cheezy flavor
