Beef & Bean Buddha Bowl

Ingredients

  • 1 cup of quinoa
  • drizzle of olive oil
  • 2 cloves of minced garlic
  • 3/4 cup of chopped white onion
  • 2 tsp of cumin
  • 1 tsp of pink himalayan salt
  • 1 tsp of worcestershire sauce
  • 1 tsp of paprika
  • 1/2 tsp of black pepper
  • 1/2 tsp of oregano
  • 1/2 tsp of chili powder
  • sprinkle of cayenne
  • for the cilantro sour cream
  • 1/2 cup of sour cream
  • 1/4 cup cilantro
  • 1/8 cup water
  • 2 tsp of lime
  • 1/8 tsp of pink salt
  • 1/8 tsp of black pepper
  • 1 cup of quinoa

  • 1/4 cup cilantro
  • 1/8 cup water
  • 2 tsp of lime
  • 1/8 tsp of pink salt
  • 1/8 tsp of black pepper

  • Greens
  • Black beans
  • Tomato
  • Avocado
  • Green onion
  • Tortilla chips

Preparation

  1. Cook quinoa until fluffy

  2. Set aside when finished

  3. In a medium sized pan on medium heat add olive oil, garlic, and onion

  4. Stir until fragrant and add quinoa

  5. Add remaining ingredients for ground not beef

  6. Stir well for a few minutes and set aside

  7. For cilantro sour cream combine all ingredients into a blender and blend until all components are well combined

  8. Pile ingredients onto plate and finish with fresh squeezed lime

  9. Serve and enjoy
