Beef & Bean Buddha Bowl
Ingredients
- 1 cup of quinoa
- drizzle of olive oil
- 2 cloves of minced garlic
- 3/4 cup of chopped white onion
- 2 tsp of cumin
- 1 tsp of pink himalayan salt
- 1 tsp of worcestershire sauce
- 1 tsp of paprika
- 1/2 tsp of black pepper
- 1/2 tsp of oregano
- 1/2 tsp of chili powder
- sprinkle of cayenne
- for the cilantro sour cream
- 1/2 cup of sour cream
- 1/4 cup cilantro
- 1/8 cup water
- 2 tsp of lime
- 1/8 tsp of pink salt
- 1/8 tsp of black pepper
- 1 cup of quinoa

- 1/4 cup cilantro
- 1/8 cup water
- 2 tsp of lime
- 1/8 tsp of pink salt
- 1/8 tsp of black pepper

- Greens
- Black beans
- Tomato
- Avocado
- Green onion
- Tortilla chips
Preparation
Cook quinoa until fluffy
Set aside when finished
In a medium sized pan on medium heat add olive oil, garlic, and onion
Stir until fragrant and add quinoa
Add remaining ingredients for ground not beef
Stir well for a few minutes and set aside
For cilantro sour cream combine all ingredients into a blender and blend until all components are well combined
Pile ingredients onto plate and finish with fresh squeezed lime
Serve and enjoy
