Buddha Acai Bowl with Chia Pudding and Fruits

Ingredients

Chia pudding

  • 1/3 cup canned coconut milk
  • 2 tbsp chia seeds
  • a small pinch sea salt
  • a good drizzle of vanilla extract

Smoothie base

  • 1/2 ripe frozen banana
  • 1/2 cup frozen raspberries
  • 1/2 cup frozen strawberries
  • 2 tsp acai powder
  • 1 serving vanilla plant protein
  • 1/2 cup canned coconut milk

Toppings

  • cherries
  • raspberries
  • blueberries
  • strawberries
  • mango
  • cashew butter
  • buckwheat granola
  • coconut yogurt
  • cacao nibs
  • honey

Preparation

  1. Mix 1/3 cup canned coconut milk, 2 tablespoons chia seeds, a small pinch of sea salt, and a good drizzle of vanilla extract for the chia pudding, then let it soak in the fridge overnight.

  2. Blend 1/2 ripe frozen banana, 1/2 cup each of frozen raspberries and strawberries, 2 teaspoons acai powder, 1 serving of vanilla plant protein, and 1/2 cup canned coconut milk for the smoothie base.

  3. Serve the smoothie base with the prepared chia pudding, along with fruits such as cherries, raspberries, blueberries, strawberries, and mango, plus cashew butter, buckwheat granola, coconut yogurt, cacao nibs, and honey.
