Chinese Classic of Chicken in Black Bean Sauce

Ingredients

  • marinade—⁣
  • 1 tbs shaoxing wine⁣
  • pinch of salt⁣
  • 1.5 tsp light soy sauce⁣
  • 1.5 tsp dark soy sauce⁣
  • 2.25 tsp of either corn or potato starch⁣
  • 250g of a mix of oyster and shiitake mushrooms⁣
  • half a green pepper, half a red pepper⁣
  • 3 garlic cloves, diced⁣
  • 1 inch piece of ginger, finely sliced⁣
  • 2 tbs chinese fermented black beans, rinsed⁣
  • 2 tsp ground chilli or chilli flakes⁣
  • 2 tbs spring onion finely sliced into rings (green part)⁣
  • 1 tsp sesame oil⁣

Preparation

  1. Wash mushrooms, cut into similar sized chunks

  2. Make marinade by mixing all marinade ingredients making sure corn/potato starch is dissolved

  3. Pour marinade over mushrooms, mix well with hands

  4. Get a wok or pan very hot then add some oil and add in peppers

  5. Stir fry until you just start seeing some charring on the peppers

  6. Remove then set aside

  7. Add a little oil to the pan again and add in the mushrooms

  8. Stir fry for 2 mins on high heat

  9. Turn heat to medium and add in ginger and garlic

  10. Stir fry for 30 secs

  11. Add black beans and stir fry until you can smell them

  12. Add in ground chilli and peppers and give everything a good stir

  13. Turn off heat, add sesame oil

  14. Serve with rice
