Creamy Curry Ramen Bowl
Ingredients
- 1 large yellow onion, chopped
- 4 cloves garlic, chopped
- 2 tablespoons grated ginger
- 4 cups vegetable stock
- 14 ounces coconut milk
- 1 tablespoon yellow curry powder
- 1 tablespoon lime juice
- 2 tablespoons light soy sauce
- Veggies of your choice
- Ramen noodles
Toppings
- Cilantro
- Chopped green onion tops
Preparation
Combine chopped onion, garlic, grated ginger, and vegetable stock in a pot and bring to a boil, then simmer for 10 minutes.
Strain the mixture into a measuring cup, rinse out the pot, and transfer the stock back to the pot.
Add chosen vegetables and simmer for 5 minutes.
Stir in coconut milk, yellow curry powder, lime juice, and light soy sauce, then bring to heat while stirring.
Cook ramen noodles according to package instructions.
Pour the broth and vegetables into bowls with the cooked ramen noodles.
Top with cilantro and chopped green onion tops and serve.
