Simple and Customizable Ramen Bowl

Ingredients

  • 32 oz mushroom stock
  • 32 oz water
  • Roughly chopped green onion bottoms
  • 1 tablespoon minced ginger
  • 4 cloves garlic, roughly chopped
  • 1 tablespoon nutritional yeast
  • 2 tablespoons light soy sauce
  • 1 teaspoon lime juice

Additions

  • Dried ramen noodles
  • Tofu
  • Raw shiitake mushrooms
  • Thinly sliced carrots
  • Shallots
  • Green onion tops

Preparation

  1. Bring the stock mixture to a boil, then set to simmer while covered for 15 minutes.

  2. Chop up vegetables and cook tofu in an air fryer or oven.

  3. Strain the stock and bring it back to a boil.

  4. Drop in dried ramen noodles.

  5. Fill bowls with goodies like raw shiitake mushrooms, thinly sliced carrots, shallots, and tofu.

  6. Ladle in the stock and add the noodles, then serve.
