Umami Noodle Bowl with Kombu Shiitake Dashi

Ingredients

  • 1 2"x2" piece kombu
  • 3 dried shiitake mushrooms
  • 2 cups water
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 1 1" slice ginger (optional)

Preparation

  1. Soak the kombu and shiitake mushrooms in the water for 1-2 hours.

  2. Transfer the mixture to a pot, add the ginger, and heat without boiling for 15 minutes.

  3. Remove from heat and strain out the kombu, mushrooms, and ginger.

  4. Stir in the soy sauce and mirin, then ladle the dashi onto your noodles and enjoy.

Tips

  1. Store the strained kombu, mushrooms, and ginger in an airtight container in the fridge and use in a stir fry to avoid food waste.
