Easy Vegan Kimchi Tofu Bowl

Ingredients

  • 1/2 pack extra firm tofu
  • 1-2 Tbsp soy sauce or tamari
  • 1/4-1/2 cup vegan kimchi
  • 1 Tbsp garlic chili sauce
  • 1 Tsp maple syrup
  • 1/2 Tsp minced garlic
  • 1 tsp minced ginger

Preparation

  1. Press and pat tofu dry. Cut into 1/2-1 inch cubes.

  2. Add to a ziplock bag. Add soy sauce or tamari, garlic chili sauce, maple syrup, minced garlic and minced ginger. Marinate for 1 to 4 hours.

  3. After marinating, mix kimchi in. Add to a bowl with brown rice, avocado, shredded carrots, edamame beans, mixed greens and more.

Tips

  1. This is a cold tofu bowl, perfect for summer meals.

  2. The recipe uses only 7 ingredients and takes about 5 minutes to prepare.
