Easy Vegan Kimchi Tofu Bowl
Ingredients
- 1/2 pack extra firm tofu
- 1-2 Tbsp soy sauce or tamari
- 1/4-1/2 cup vegan kimchi
- 1 Tbsp garlic chili sauce
- 1 Tsp maple syrup
- 1/2 Tsp minced garlic
- 1 tsp minced ginger
Preparation
Press and pat tofu dry. Cut into 1/2-1 inch cubes.
Add to a ziplock bag. Add soy sauce or tamari, garlic chili sauce, maple syrup, minced garlic and minced ginger. Marinate for 1 to 4 hours.
After marinating, mix kimchi in. Add to a bowl with brown rice, avocado, shredded carrots, edamame beans, mixed greens and more.
Tips
This is a cold tofu bowl, perfect for summer meals.
