Vegan Kimchi Tofu Bowl

Ingredients

  • 1/2 pack extra firm tofu
  • 1-2 Tbsp soy sauce or tamari
  • 1/4-1/2 cup vegan kimchi
  • 1 Tbsp garlic chili sauce
  • 1 Tsp maple syrup
  • 1/2 Tsp garlic, minced
  • 1 tsp ginger minced

Bowl components

  • Brown rice
  • Avocado
  • Shredded carrots
  • Edamame beans
  • Mixed greens

Preparation

  1. Press and pat tofu dry. Cut into 1/2-1 inch cubes.

  2. Add to a ziplock bag. Add soy sauce or tamari, sriracha, maple syrup, garlic and ginger. Marinate for 1 to 4 hours.

  3. After marinating, mix kimchi in. Add to a bowl with brown rice, avocado, shredded carrots, edamame beans, mixed greens and more.

  1. This recipe uses 7 ingredients and requires about 5 minutes of prep time.
