Flavorful Veggie Burrito Bowl
Ingredients
- Cooked long grain rice with lime zest and chopped fresh coriander

- Pumpkin seeds (for garnish)
Spiced black beans
- 1 onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 cans black beans, drained
- 1 can chopped tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 to 1 teaspoon chilli flakes
- Salt to taste
Preparation
Mix lime zest and chopped fresh coriander into cooked long grain rice.
Prepare the spiced black beans using the dedicated steps.
Chop the vegetables into desired sizes.
Assemble the burrito bowl by combining rice, spiced black beans, vegetables, and other components in individual bowls or a shared platter.
Serve with grated cheese, salsa, guacamole, jalapeño, lime wedges, and pumpkin seeds.

Add garlic and spices and cook for another couple of minutes.
Add the drained black beans and chopped tomatoes.
