Marinated Cherry Tomato Bowl
Ingredients
- 1 pint container of cherry tomatoes, halved
- 2 tablespoons good quality balsamic vinegar
- 2 teaspoons maple syrup
- 2 teaspoons olive oil
- 2 cloves garlic, crushed
- Handful of fresh sliced basil
- 1/2 teaspoon dry basil
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon red pepper flakes
- Pinch of kosher salt
- Fresh cracked black pepper
Bowl components
- Roasted russet potatoes
- Chickpeas
- Spinach
Preparation
Marination
Combine all the ingredients for the marinated tomatoes.
Place in the fridge to marinate for at least 30 minutes.
Assembly
Roast russet potatoes until golden and tender.
Arrange spinach on a plate or bowl, add roasted potatoes and chickpeas.
Top with the marinated tomatoes as desired.
