Mediterranean Quinoa Bowl with Veggies

Ingredients

  • Quinoa
  • Cucumbers
  • Chickpeas
  • Olives
  • Avocado
  • Shallots

Dressing

  • Olive oil
  • Lemon juice

Preparation

  1. Cook quinoa according to package instructions.

  2. Chop cucumbers and slice avocado into bite-sized pieces.

  3. Drain and rinse chickpeas if using canned.

  4. Marinate shallots in a mixture of olive oil and lemon juice for at least 15 minutes.

  5. Combine all ingredients in a large bowl and toss together.
