Mediterranean Quinoa Bowl with Veggies
Ingredients
- Quinoa
- Cucumbers
- Chickpeas
- Olives
- Avocado
- Shallots
Dressing
- Olive oil
- Lemon juice
Preparation
Cook quinoa according to package instructions.
Chop cucumbers and slice avocado into bite-sized pieces.
Drain and rinse chickpeas if using canned.
Marinate shallots in a mixture of olive oil and lemon juice for at least 15 minutes.
Combine all ingredients in a large bowl and toss together.
