One Wok Leftovers Mango Fried Rice
Ingredients

- here is the recipe:
- 1 cup of really soft ripe mango
- 1 cup of cooked basmati rice
- about 1/2 cup of chopped firm tofu @getloosefoods
- 2 mushrooms @riverford
- 1 spring onion
- about 1/4 cup of chopped onion
- 1 garlic clove
- 1 small carrot – sliced
- 1 cup of steamed purple sprouting broccoli @riverford
- 2cm long thumb thick size of fresh ginger- shredded
- 1 tbs of coconut oil @thecoconutco
- 1 tbs of soya sauce @clearspringuk .
Preparation
Cook the chopped onion and garlic in the coconut oil for about 10 minutes while you prepare all the other ingredients
Add the mango, ginger, 1/2 cup of water, stir and then cook covered for about 10 minutes
Add the carrots, 1/2 cup of water, stir, cover and cook for 5 minutes
Add the mushrooms and soya sauce stir and cook for 5 minutes
Add the tofu and just fold it in
Then fold in the rice and just warm it up for about 2 minutes
Fold in the broccoli, cover it with the rice just so it warms up and then sprinkle in chopped spring onion, a bit of coriander and enjoy
