One Wok Leftovers Mango Fried Rice

Ingredients

  • i really try my best not to throw away any food now.
  • you can follow the process of me making this recipe in my stories.
  • here is the recipe:
  • 1 cup of really soft ripe mango
  • 1 cup of cooked basmati rice
  • about 1/2 cup of chopped firm tofu @getloosefoods
  • 2 mushrooms @riverford
  • 1 spring onion
  • about 1/4 cup of chopped onion
  • 1 garlic clove
  • 1 small carrot – sliced
  • 1 cup of steamed purple sprouting broccoli @riverford
  • 2cm long thumb thick size of fresh ginger- shredded
  • 1 tbs of coconut oil @thecoconutco
  • 1 tbs of soya sauce @clearspringuk .

Preparation

  1. Cook the chopped onion and garlic in the coconut oil for about 10 minutes while you prepare all the other ingredients

  2. Add the mango, ginger, 1/2 cup of water, stir and then cook covered for about 10 minutes

  3. Add the carrots, 1/2 cup of water, stir, cover and cook for 5 minutes

  4. Add the mushrooms and soya sauce stir and cook for 5 minutes

  5. Add the tofu and just fold it in

  6. Then fold in the rice and just warm it up for about 2 minutes

  7. Fold in the broccoli, cover it with the rice just so it warms up and then sprinkle in chopped spring onion, a bit of coriander and enjoy
