One-Wok Mango Fried Rice
Ingredients
- 1 cup of really soft ripe mango
- 1 cup of cooked basmati rice
- About 1/2 cup of chopped firm tofu
- 2 mushrooms
- 1 spring onion
- About 1/4 cup of chopped onion
- 3-5 small rings of chilli peppers
- 1 garlic clove
- 1 small carrot – sliced
- 1 cup of steamed purple sprouting broccoli
- 2cm long thumb thick size of fresh ginger- shredded
- 1 Tbs of coconut oil
- 1 Tbs of soya sauce
Preparation
Cook the chopped onion and garlic in the coconut oil for about 10 minutes while you prepare all the other ingredients.
Add the mango, ginger, 1/2 cup of water, stir and then cook covered for about 10 minutes.
Add the carrots, 1/2 cup of water, stir, cover and cook for 5 minutes.
Add the mushrooms and soya sauce stir and cook for 5 minutes.
Add the tofu and just fold it in.
Then fold in the rice and just warm it up for about 2 minutes.
Fold in the broccoli, cover it with the rice just so it warms up and then sprinkle in chopped spring onion, a bit of coriander and enjoy.
