One-Wok Mango Fried Rice

Ingredients

  • 1 cup of really soft ripe mango
  • 1 cup of cooked basmati rice
  • About 1/2 cup of chopped firm tofu
  • 2 mushrooms
  • 1 spring onion
  • About 1/4 cup of chopped onion
  • 3-5 small rings of chilli peppers
  • 1 garlic clove
  • 1 small carrot – sliced
  • 1 cup of steamed purple sprouting broccoli
  • 2cm long thumb thick size of fresh ginger- shredded
  • 1 Tbs of coconut oil
  • 1 Tbs of soya sauce

Preparation

  1. Cook the chopped onion and garlic in the coconut oil for about 10 minutes while you prepare all the other ingredients.

  2. Add the mango, ginger, 1/2 cup of water, stir and then cook covered for about 10 minutes.

  3. Add the carrots, 1/2 cup of water, stir, cover and cook for 5 minutes.

  4. Add the mushrooms and soya sauce stir and cook for 5 minutes.

  5. Add the tofu and just fold it in.

  6. Then fold in the rice and just warm it up for about 2 minutes.

  7. Fold in the broccoli, cover it with the rice just so it warms up and then sprinkle in chopped spring onion, a bit of coriander and enjoy.
