Sesame Chic Peas, Cabbage & Kale

Ingredients

  • 1 can of chic peas
  • 3 green onions
  • 2 cups of dino kale chopped
  • 2 cups of red cabbage
  • 1 large knob of ginger peeled and chopped
  • 2 clove of garlic minced
  • 1 tbsp of toasted sesame oil
  • 1 tbsp + 2 tsp of light soy sauce or tamari
  • 2 tsp of rice vinegar
  • 2 tsp of sesame seeds for garnish

Preparation

  1. Sauté the rinsed and drained chic peas in the sesame oil & tamari along with the chopped ginger for about 8- 10 minutes or until you notice the chic peas becoming crispy

  2. Add in the chopped kale, cabbage green onions and garlic and continue to cook on med - low heat for 5 -7 minutes stirring often

  3. Add in the rice vinegar and additional soy sauce and cook for just a few more minutes

  4. Add in the sesame seeds and mix well before serving
