Sesame Chic Peas, Cabbage & Kale
Ingredients
- 1 can of chic peas
- 3 green onions
- 2 cups of dino kale chopped
- 2 cups of red cabbage
- 1 large knob of ginger peeled and chopped
- 2 clove of garlic minced
- 1 tbsp of toasted sesame oil
- 1 tbsp + 2 tsp of light soy sauce or tamari
- 2 tsp of rice vinegar
- 2 tsp of sesame seeds for garnish
Preparation
Sauté the rinsed and drained chic peas in the sesame oil & tamari along with the chopped ginger for about 8- 10 minutes or until you notice the chic peas becoming crispy
Add in the chopped kale, cabbage green onions and garlic and continue to cook on med - low heat for 5 -7 minutes stirring often
Add in the rice vinegar and additional soy sauce and cook for just a few more minutes
Add in the sesame seeds and mix well before serving
