Tempeh Vegetable Breakfast Scramble

Ingredients

  • 1/2 block tempeh
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic salt
  • 2 tablespoons Trader Joe's cashew fiesta cheese
  • 2 tablespoons unsweetened plant milk
  • Broccoli
  • Cauliflower
  • Mushrooms

Optional additions

  • 2 slices sprouted grain toast
  • Avocado

Preparation

  1. Steam or sauté the vegetables in a pan with water for 4-6 minutes until softened.

  2. In a separate bowl, crumble the tempeh and mix it with 2 tablespoons nutritional yeast, 1/4 teaspoon turmeric, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic salt, 2 tablespoons cashew fiesta cheese, and 2 tablespoons unsweetened plant milk.

  3. Add the tempeh mixture to the vegetables in the pan and stir to combine, heating through to complete the scramble.

  4. Serve with 2 slices of sprouted grain toast and avocado.
