Tempeh Vegetable Breakfast Scramble
Ingredients
- 1/2 block tempeh
- 2 tablespoons nutritional yeast
- 1/4 teaspoon turmeric
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic salt
- 2 tablespoons Trader Joe's cashew fiesta cheese
- 2 tablespoons unsweetened plant milk
- Broccoli
- Cauliflower
- Mushrooms
Optional additions
- 2 slices sprouted grain toast
- Avocado
Preparation
Steam or sauté the vegetables in a pan with water for 4-6 minutes until softened.
In a separate bowl, crumble the tempeh and mix it with 2 tablespoons nutritional yeast, 1/4 teaspoon turmeric, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic salt, 2 tablespoons cashew fiesta cheese, and 2 tablespoons unsweetened plant milk.
Add the tempeh mixture to the vegetables in the pan and stir to combine, heating through to complete the scramble.
Serve with 2 slices of sprouted grain toast and avocado.
