Easy Vegan Tofu Omelette
Ingredients
- 100 g silken tofu
- 70 g chickpea flour
- 1 Tbsp nutritional yeast
- 1/2 tsp baking powder
- 1/4 - 1/2 tsp salt
- 1/2 tsp kala namak salt
- 1/2 tsp turmeric
- 1 pinch of pepper
- 1 Tbsp chopped parsley
- 120 ml unsweetened plant milk
Preparation
Mix all dry ingredients in a bowl. Add plant milk and mix again until well combined.
Heat a little olive oil in a pan. Once pan is hot, add half of the batter and spread it evenly with the back of a spoon.
Flip the omelette carefully as soon as the top starts to get dry. Remove from the heat after half a minute. Enjoy!
