Vegan Tofu Scramble

Ingredients

  • 2 tbs nutritional yeast
  • 1 tsp garlic powder
  • 1/4 or 1/2 tsp turmeric powder
  • 1/2 tsp sea salt and pepper
  • extra veggies to toss into your scramble: I added onions ?, spinach ?, cherry tomatoes ?, and avocado

Preparation

  1. Add all the tofu ingredients into a blender and blend until well combined

  2. You can also mash the tofu by hand with a fork in a bowl for a more

  3. In a pan, heat up 1 tbs avocado oil and add in chopped onions if using

  4. Then add in the tofu mixture and cook on medium low heat for 3-5 minutes or until the tofu mixture thickens up to a scramble texture. add in your spinach or any other veggies and cook until desired consistency

  5. Top your tofu mixture on some toasted sourdough bread ? (bonus points if it's homemade ?)

  6. Add any other extras and EBTB. enjoy
