Vegan Tofu Scramble
Ingredients
- 2 tbs nutritional yeast
- 1 tsp garlic powder
- 1/4 or 1/2 tsp turmeric powder
- 1/2 tsp sea salt and pepper
- extra veggies to toss into your scramble: I added onions ?, spinach ?, cherry tomatoes ?, and avocado
Preparation
Add all the tofu ingredients into a blender and blend until well combined

In a pan, heat up 1 tbs avocado oil and add in chopped onions if using
Then add in the tofu mixture and cook on medium low heat for 3-5 minutes or until the tofu mixture thickens up to a scramble texture. add in your spinach or any other veggies and cook until desired consistency
Top your tofu mixture on some toasted sourdough bread ? (bonus points if it's homemade ?)
