Thai Coconut Curry Veggie Bowl
Ingredients
- 1 bag Thai curry RightRice
- 2/3 cup water
- 2/3 cup full fat coconut milk
- Juice of 1 lime
- 2 cups chopped broccoli
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/2 bunch chopped cilantro
Preparation
Add right rice, water, coconut milk and lime juice to a saucepan and bring to a boil. Cover, remove from heat, and let sit for 10-12 minutes until liquid is absorbed.
In a separate skillet, sauté the vegetables until tender. Add to the saucepan with the right rice and toss to combine with cilantro.
Tips
Optionally top with a drizzle of sriracha for extra heat.
