Thai Coconut Curry Veggie Bowl

Ingredients

  • 1 bag Thai curry RightRice
  • 2/3 cup water
  • 2/3 cup full fat coconut milk
  • Juice of 1 lime
  • 2 cups chopped broccoli
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 bunch chopped cilantro

Preparation

  1. Add right rice, water, coconut milk and lime juice to a saucepan and bring to a boil. Cover, remove from heat, and let sit for 10-12 minutes until liquid is absorbed.

  2. In a separate skillet, sauté the vegetables until tender. Add to the saucepan with the right rice and toss to combine with cilantro.

Tips

  1. Optionally top with a drizzle of sriracha for extra heat.
