Vegan Mango Ginger Rice Bowl
Ingredients
- 1/2 cup jasmine rice
- 1/2 mango
- 1 Persian cucumber
- 1 cup arugula
- 8 baby carrots
- fresh ginger
Dressing
- 2 tablespoons tamari
- 1 tablespoon sesame oil
Toppings
- black sesame seeds
- chives
Preparation
Cook the jasmine rice. While it's cooking, peel and dice the cucumber, dice the carrots, dice the mango, and mince the fresh ginger.
Add arugula to the bottom of the bowl. Top with the jasmine rice, cucumber, carrots, mango, and minced ginger.
Top with sesame seeds and chives. Combine the tamari and sesame oil to make the dressing and pour it over the bowl.
