Mango Ginger Rice Bowl

Ingredients

  • 1/2 cup jasmine rice
  • 1/2 mango
  • 1 persian cucumber
  • 1 cup arugula
  • 8 baby carrots
  • fresh ginger
  • black sesame seeds
  • chives

Dressing

  • 2 tbsp tamari
  • 1 tbsp sesame oil

Preparation

  1. Cook jasmine rice. While it's cooking, peel and dice the cucumber, dice the carrots, and dice the mango.

  2. Add arugula to the bottom of your bowl. Top with the jasmine rice, cucumber, carrots, mango, and fresh ginger.

  3. Top with sesame seeds and chives. Combine tamari and sesame oil to make the dressing and use it.
