Vegan Poke Bowl with Papaya Marinade

Ingredients

  • 1 cup diced ripe papaya
  • 1 Lotus Foods Organic White Jasmine Heat & Eat Rice Pouch
  • 1 avocado
  • 2 cucumbers
  • 1 carrot
  • 1 small red onion (optional)
  • 1/3 cup green peas or edamame
  • 1/2 jalapeno
  • Handful of micro greens
  • 1 tsp sesame seeds

Marinade

  • 1/2 cup Tamari or light soy sauce
  • 1 tsp grated fresh ginger
  • 1 tsp or more sambal oelek chili sauce
  • 1 tsp miso
  • 1/2 sheet nori cut in small pieces
  • 1 tsp maple syrup
  • 1 tsp sesame oil
  • Few sprinkles of sesame seeds

Preparation

  1. Mix the ingredients for the marinade until well combined.

  2. Pour it over diced papaya and leave it for at least 10 min.

  3. Prepare rice per directions on package and divide evenly between 2 bowls.

  4. Arrange the avocado, sliced cucumbers, edamame or peas, sliced onions, sliced carrot ribbons, sliced jalapeños, micro greens, and marinated papaya, then sprinkle with more sesame seeds and enjoy.
