Easy Vegan Stir-Fry Bowl

Ingredients

  • small shallot
  • garlic
  • Hodos Curry Nuggets
  • Trader Joe’s Holiday Vegetable blend
  • Seeds of Change Quinoa and Brown Rice
  • bit of vegetable stock
  • few handful of greens

Sauce

  • tahini
  • lemon juice
  • tamari
  • touch of maple syrup
  • warm water

Preparation

  1. Saute a small shallot and garlic.

  2. Add the Holiday Vegetable blend, quinoa and brown rice, and curry nuggets.

  3. Add a bit of vegetable stock to help soften.

  4. Add a few handful of greens.

  5. Whip up a simple sauce with tahini, lemon juice, tamari, a touch of maple syrup, and warm water.

Notes

  1. The dish is flavorful as is and may not require additional seasonings.
