Easy Vegan Curry Nugget Stir-Fry

Ingredients

  • Small shallot
  • Garlic
  • Trader Joe’s Holiday Vegetable blend
  • Seeds of Change Quinoa and Brown Rice
  • Hodos Curry Nuggets
  • Bit of vegetable stock
  • Few handfuls of greens

Sauce

  • Tahini
  • Lemon juice
  • Tamari
  • Touch of maple syrup
  • Warm water

Preparation

  1. Sauté a small shallot and garlic.

  2. Add the Holiday Vegetable blend, quinoa and brown rice, and curry nuggets.

  3. Pour in a bit of vegetable stock to help soften the ingredients.

  4. Add a few handfuls of greens.

  5. Whip up a simple sauce by mixing tahini, lemon juice, tamari, a touch of maple syrup, and warm water.
