Vegan Lentil and Broccoli Taco Meat
Ingredients
- 400g lentils
- 1 large broccoli stem, shredded
- 1/2 red onion, sliced thinly
- 1-2 sun dried tomatoes, chopped
- 2 garlic cloves, chopped
- 1 tbsp tomato purée
- 1 tsp tamari or soy sauce
- 1 tsp smoked paprika
- 1 tsp cumin powder
- 1 tbsp nutritional yeast
- Pinch of salt and black pepper
- Red cabbage
- Coriander
- Lime juice
Preparation
Sauté the onion and garlic in a pan until softened and fragrant.
Add the shredded broccoli stem, lentils, sun dried tomatoes, and spices, cooking until well combined and heated through.
Stir in the tomato purée, tamari or soy sauce, and nutritional yeast, adjusting seasoning with salt and pepper.
Serve the mixture in potato tortillas, topped with red cabbage, coriander, and a squeeze of lime juice.
