Bbq Jackfruit and Black Bean Quesadillas

Ingredients

  • 2 cans young jackfruit, shredded
  • 2 cans black beans, rinsed and drained
  • 1/2 yellow or sweet onion, diced
  • 2 garlic cloves, minced
  • 2 tsp Trader Joe’s chili seasoning (or substitute with chili powder, cumin, paprika, and garlic powder)
  • 1 cup of your favorite BBQ sauce
  • 2 cups baby spinach, roughly chopped
  • 9 large tortillas
  • Vegan shredded cheese, to taste
  • Mild oil, for lightly frying if desired

Preparation

  1. Dry sauté the onion in a large pan for 5-7 minutes until soft and starting to caramelize.

  2. Add garlic and cook for 1 minute.

  3. Add beans, jackfruit, and spices, and cook for a bit more.

  4. Add BBQ sauce and heat through.

  5. Then add spinach and cook until just wilted.

  6. Mix well to combine everything and remove from heat.

Assembly

  1. Divide the mixture on one side of each tortilla.

  2. Add cheese to taste and fold over.

  3. Press down to hold them together.

  4. Rinse and dry the pan that had the mixture.

  5. Coat lightly with oil.

  6. Brown each side for a few minutes.

  7. Serve with your favorite toppings.
