15-Minute Vegan Sweet Potato Chickpea Bowl

Ingredients

  • 1 small peeled and diced sweet potato
  • 2 sliced garlic cloves
  • 2-3 teaspoons olive oil
  • 1 can rinsed and drained chickpeas
  • 1/2 teaspoon smoked paprika
  • a few whole almonds (optional)
  • 3-4 cups chopped kale
  • 1/3 cup veggie broth or 2 teaspoons Yondu umami vegetable sauce mixed with water

Preparation

  1. Add the sweet potato and garlic to a non-stick pan with olive oil and sauté over medium heat for 8 minutes.

  2. Add the chickpeas, smoked paprika, almonds if using, kale, and veggie broth, then mix everything and cook for 5 more minutes.

  3. Top with store-bought garlic Parm vegan cheese dip or hummus if desired.

Tips

  1. You can use more kale if preferred.
