15-Minute Vegan Sweet Potato Chickpea Bowl
Ingredients
- 1 small peeled and diced sweet potato
- 2 sliced garlic cloves
- 2-3 teaspoons olive oil
- 1 can rinsed and drained chickpeas
- 1/2 teaspoon smoked paprika
- a few whole almonds (optional)
- 3-4 cups chopped kale
- 1/3 cup veggie broth or 2 teaspoons Yondu umami vegetable sauce mixed with water
Preparation
Add the sweet potato and garlic to a non-stick pan with olive oil and sauté over medium heat for 8 minutes.
Add the chickpeas, smoked paprika, almonds if using, kale, and veggie broth, then mix everything and cook for 5 more minutes.
Top with store-bought garlic Parm vegan cheese dip or hummus if desired.
Tips
You can use more kale if preferred.
