Blueberry Coconut Banana Bread
Ingredients
- 180g all-purpose flour
- 60g rolled oats
- 1 tbsp baking powder
- 150g stevia/sugar
- 1.5 tsp baking powder (or 1 heaped tsp)
- 1 tbsp vanilla sugar
- 1/2 tsp ginger
- 1/2 tsp cardamom
- Pinch of salt
- 2 ripe bananas (medium-large)
- 80ml neutral oil
- 80-100ml water or plant-based milk (depending on consistency)
- 4-5 tbsp shredded coconut
- Blueberries
- Optional: walnuts
- Some oil to grease the form
Preparation
In a bowl, add the flour, sugar, oats, 3 tbsp shredded coconut, cardamom, ginger, vanilla sugar, pinch of salt, and baking powder. Mix.
In another bowl, mash the bananas, add the oil and mylk/water. Mix. Pour into the dry mix. Mix until combined. Add more liquid if necessary.
Preheat the oven to 175°C (347°F).
Pour the mixture into a greased form (bread tin). Coat with some coconut shreds and blueberries. Cover with parchment paper.
Bake in the oven for 30 minutes. Check after 25 minutes and poke with a knife or potato stick to see if it comes out "dry," indicating it's ready.
Be cautious not to overbake, as it can turn out dry.
Optional: Consider adding lemon juice or chocolate chips for variation.
