Maple Almond Baked Tofu

Ingredients

  • 400g firm tofu
  • 2 tbsp maple syrup
  • 2 tbsp tamari
  • 1 tbsp liquid smoke
  • 2 tsp almond butter
  • 6 tbsp coconut water

Preparation

  1. Squeeze any excess water out of the tofu and cut into small blocks or triangles or whatever takes your fancy

  2. In a large ovenproof dish mix together all the other ingredients, then place the tofu pieces in the dish in a single layer. Turn them over so they are covered in the marinade on both sides and leave for an hour or two. But don't worry if you don't have time, I baked mine almost straightaway and they were amazing

  3. Bake at 200C for about 20 mins, then turn the pieces over and bake for another 10-15 mins or until the marinade has been absorbed. And enjoy
