Hasselback Potatoes
Ingredients
- potatoes- i used new potatoes ⠀
- 4 tablespoons coconut oil⠀
- salt⠀
- pepper⠀
Preparation
Heat the oven to 220c with a rack in the lower-middle position
Wash and dry the potatoes: scrub the potatoes clean and pat them dry
Cut slits into the potato
You can rest the potato on a serving spoon and use that as a guide for when to stop slicing — slice straight down and when your knife hits the edge of the spoon, stop slicing
Brush the potatoes coconut oil and sprinkle with salt and pepper ⠀
Bake in a skillet for around 30-40 minutes until golden and crispy ⠀
