Vegan Sweet Potato Chickpea Sheet Pan

Ingredients

  • 1 (15 oz) can chickpeas
  • 1 medium sweet potato
  • 1 head of broccoli
  • 1/2 medium red onion
  • 1 tsp smoked paprika
  • 1/2 tsp fennel seed
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1-2 tbsp olive oil
  • Handful of fresh parsley
  • Handful of fresh cilantro

Preparation

  1. Preheat oven to 400°F.

  2. Dry the chickpeas with a clean kitchen towel and lightly rub them.

  3. Remove any loose skins from the chickpeas.

  4. Add the chickpeas, sweet potato, broccoli, and red onion to a sheet pan.

  5. Sprinkle the herbs and spices over the top.

  6. Drizzle with olive oil, toss together with your hands, and spread out evenly on the sheet pan.

  7. Bake for 25-30 minutes.

  8. Add fresh parsley and cilantro, toss to mix.

Serving suggestions

  1. Serve in a wrap or in a bowl with rice and hummus.
