Vegan Sweet Potato Chickpea Sheet Pan
Ingredients
- 1 (15 oz) can chickpeas
- 1 medium sweet potato
- 1 head of broccoli
- 1/2 medium red onion
- 1 tsp smoked paprika
- 1/2 tsp fennel seed
- 1/2 tsp dried thyme
- 1/2 tsp dried basil
- 1/2 tsp ground cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- 1-2 tbsp olive oil
- Handful of fresh parsley
- Handful of fresh cilantro
Preparation
Preheat oven to 400°F.
Dry the chickpeas with a clean kitchen towel and lightly rub them.
Remove any loose skins from the chickpeas.
Add the chickpeas, sweet potato, broccoli, and red onion to a sheet pan.
Sprinkle the herbs and spices over the top.
Drizzle with olive oil, toss together with your hands, and spread out evenly on the sheet pan.
Bake for 25-30 minutes.
Add fresh parsley and cilantro, toss to mix.
Serving suggestions
Serve in a wrap or in a bowl with rice and hummus.
