Easy Mediterranean Rice Noodle Salad

Ingredients

  • 250g rice noodles
  • 1 jar black olives
  • 1 can chickpeas
  • 1 carrot
  • Handful of parsley
  • 1 feta cheese

Dressing

  • 1 jar paprika-flavored pesto
  • Juice of 1 lemon
  • 3 tablespoons oil
  • 1 tablespoon salt

Preparation

  1. Cook the rice noodles according to package directions and let them cool.

  2. Chop the carrot and parsley.

  3. Drain and rinse the black olives and chickpeas.

  4. Crumble the feta cheese.

  5. In a large bowl, combine the noodles, olives, chickpeas, carrot, parsley, and feta.

  6. Mix the paprika-flavored pesto, lemon juice, oil, and salt to make the dressing.

  7. Pour the dressing over the salad and toss until well combined.

  8. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
