Nutella Cinnamon Roll

Ingredients

  • 1tsp dry active yeast
  • 25ml warm water
  • 25g sugar
  • 220g self raising flour
  • 1/2tsp salt
  • 30g coconut oil, melted
  • 100ml natures charm coconut milk
  • filling:
  • 50g vegan nutella (eg. @jimjams_spreads )
  • 40g natures charm condensed coconut milk
  • 1tbsp cinnamon

Preparation

  1. Combine yeast, sugar and water in a small bowl and set aside for 5-10minutes until frothy

  2. Meanwhile, in a mixing bowl add the flour and salt and stir. Add in the coconut oil, milk and yeast mixture and stir together until a stiff dough forms

  3. Knead the dough on a lightly floured surface for 5 minutes before transferring to a well oiled bowl. Cover and leave to prove in a warm place for around 1h (until doubled in size)

  4. Meanwhile, make the filling by mixing together the ingredients – you may find it easier to do this over a pan of simmering water if your mixture is quite stiff

  5. Roll out dough onto a clean work surface into a rectangle, spread over the filling equally and roll

  6. Cut into 6 equal pieces and place in a lined cake tin. Cover and leave to rise for another hour. Preheat oven to 175C

  7. Cook in the oven for approximately 35 minutes until browned. Remove and leave to cool before serving

  8. Best served heated in the microwave for 10-20 seconds
