- Sautéed two chopped medium sweet potatoes until soft
- added ~1/2 cup coconut milk
- chickpeas & kale. Sautéed that over medium heat until the kale wilted & added all the spices I felt like adding (tonight it was smoked paprika
- garlic powder
- curry powder
- cayenne
- salt & pepper). Less than half an hour for this comforting & flavorful bowl
- served over rice made for a tasty Monday night! (& still have leftovers for tomorrow nights dinner!)
