Quick Curry Inspired Bowl

  • Sautéed two chopped medium sweet potatoes until soft
  • added ~1/2 cup coconut milk
  • chickpeas & kale. Sautéed that over medium heat until the kale wilted & added all the spices I felt like adding (tonight it was smoked paprika
  • garlic powder
  • curry powder
  • cayenne
  • salt & pepper). Less than half an hour for this comforting & flavorful bowl
  • served over rice made for a tasty Monday night! (& still have leftovers for tomorrow nights dinner!)
