Vegan Hamburgers; Spicy Tempeh Sloppy Joe's Sliders

Ingredients

  • 1 pack of mini hamburger buns
  • 1 pack of 3grain tempeh
  • 1 small onion, minced
  • 4 cloves of garlic, minced
  • about 4 caps of crimini/baby bella, chopped finely
  • 3 tablespoons of chopped bell pepper
  • 1 tablespoon tomato paste
  • 1 tablespoon butter plus more for buns
  • 2 teaspoon ? oil
  • dash of liquid smoke (optional)
  • sauce:
  • 1/4 cup water
  • 2-3 tablespoons ketchup
  • 1.5 tablespoons worcestershire sauce
  • 1 tablespoon soy sauce
  • 3 teaspoons brown sugar
  • 2 teaspoons mustard
  • 1/2 teaspoons cayenne pepper

Preparation

  1. Whisk together sauce ingredients in a bowl and set aside

  2. Crumble tempeh into pieces with your fingers, place them in a heated nonstick pan with 1 teaspoon oil, and cook until lightly brown

  3. Remove and set aside

  4. Using the same pan, melt butter, and sauté onion and garlic until soft, then drizzle the remaining oil, add mushrooms, bell peppers and cook for another 2 minutes

  5. Add tempeh and sauce, cook until sauce is reduced

  6. Season with salt if needed

  7. Serve on a buttered toasted buns
