Mushroom Miso Hummus Toast

Ingredients

  • 240 g cooked chickpeas⠀
  • 1 tbsp genmai miso paste ⠀
  • 2 tbsp tahini⠀
  • 2 tbsp lemon juice ⠀
  • 2-4 tbsp water⠀
  • 1 garlic clove⠀
  • 1/4 tsp cayenne pepper⠀
  • salt & pepper to taste⠀

Preparation

  1. Add all ingredients to a high container and blend with a hand held blender until smooth

  2. Add salt and pepper to taste and more water if necessary

  3. Ingredients mushrooms:⠀

  4. G mushrooms⠀

  5. Tbsp maple syrup ⠀

  6. Tbsp tamari ⠀

  7. Tbsp apple vinegar ⠀

  8. Tsp sesame oil ⠀

  9. Tsp freshly grated ginger⠀

  10. Fresh parsley, chopped⠀

  11. Cut mushrooms in halves ⠀

  12. Mix the liquid ingredients and ginger in a small bowl and pour over the mushrooms

  13. Mix well and let marinate for 10 minutes ⠀

  14. Heat up a pan and add mushrooms

  15. Fry for 5-7 minutes until golden brown

  16. Take off the heat and sprinkle with fresh parsley

  17. Enjoy!
