Spiced Pumpkin, Caramelised Onion & Goats Cheese Crostinis

Ingredients

  • 1️⃣sourdough bread (4-6 large slices), lightly toasted.
  • 2️⃣tomato base: mix tomato puree (1 tablespoon), garlic puree (1 teaspoon), free-from pesto (1 teaspoon) & pasata (100g). 3️⃣topping 1 + 2: one third of a small pumpkin peeled, sliced. evenly coat in cumin (1/2 teaspoon), black pepper, paprika (1/4 teaspoon), chilli powder (1/4 teaspoon) & generous drizzle of rapeseed oil. roast at 180c for 20 mins. turn at the half-way point and add 1 sliced sweet red pepper to roast for remaining 10 mins.
  • 4️⃣topping 3: caramelised onion - fry off 1 x red onion in balsamic vinegar (2 tablespoons) and golden caster sugar (1 tablespoon) until soft.
  • 5️⃣topping 4 + 5: goats cheese & cherry tomatoes (halved)
  • 6️⃣topping 6+ 7: 1 fresh red chilli and 5 fresh basil leaves finely chopped.
  • 7️⃣topping 8: mixed herbs
  • 1️⃣Sourdough Bread (4-6 large slices), lightly toasted

Turn at the half-way point and add 1 sliced Sweet Red Pepper to roast for remaining 10 mins
  • 4️⃣Topping 3: Caramelised Onion - Fry off 1 x Red Onion in Balsamic Vinegar (2 tablespoons) and Golden Caster Sugar (1 tablespoon) until soft
  • 5️⃣Topping 4 + 5: Goats Cheese & Cherry Tomatoes (halved)
  • 6️⃣Topping 6+ 7: 1 Fresh Red Chilli and 5 Fresh Basil leaves finely chopped
  • 7️⃣Topping 8: Mixed herbs

Preparation

  1. Lightly toast each slice of sourdough in the toaster

  2. Add 2 teaspoons of tomato sauce to each

  3. Then top with the spiced pumpkin, sweet red pepper, caramelised onion and cherry toms

  4. Crumble over a little goats cheese on each

  5. Bake in the oven at 180c on top shelf with grill on for 15/20 mins or until the goats cheese begins to brown

  6. Every oven is different so just keep an eye on it* ??to serve, sprinkle over the fresh red chilli, basil and mixed herbs
