Chocolate Cake with Brigadeiro Fillings and Ganache
Ingredients
- 4 eggs
- 1 cup milk
- 1 cup oil
- 2 cups all-purpose flour
- 1.5 cups sugar
- 3 tablespoons cocoa powder (100% or 50%)
- 1 tablespoon baking powder
- 1 teaspoon baking soda
Chocolate brigadeiro filling
- 1 can sweetened condensed milk
- equal amount whole milk
- 1 tablespoon cornstarch
- 3 tablespoons cocoa powder
- 1 tablespoon margarine
- 1 can cream with whey
- strawberry pieces
Milk brigadeiro filling
- 2 cans sweetened condensed milk
- 2 cans cream
- 1 cup milk powder
- 1 tablespoon margarine
Ganache coverage
- 400 grams semi-sweet chocolate
- 1 box cream
Preparation
Cake
Blend all ingredients except flour in a blender for 3 minutes.
Transfer the mixture to a bowl and gradually add the sifted flour, mixing until homogeneous.
Add the baking powder and baking soda and mix gently.
Bake in a preheated oven at 200Β°C for 45 to 50 minutes.
Chocolate brigadeiro filling
Mix all ingredients except the cream well.
Cook over low heat, stirring until it forms a cream.
Remove from heat and stir in the cream.
Let it cool and add strawberry pieces.
Milk brigadeiro filling
Cook all ingredients over heat until thickened.
Let it cool before using to fill the cake.
Ganache
Melt the chocolate, add the cream, and mix well.
Assembly
After the cake has cooled, cut it into layers.
Spread the chocolate brigadeiro filling between the layers.
Add the milk brigadeiro filling as another layer.
Cover the entire cake with the ganache.

This recipe is for a 20cm x 10cm high pan.
