Cinnamon Cake with Lemon Cream Cheese Frosting
Ingredients
- 1 + 1/3 cup oat flour
- 2/3 cup white flour
- 1/4 cup rolled oats
- 1/3 cup coconut sugar
- 2 tsp baking powder
- 1/3 tsp ground cloves
- 1/2 tsp cardamom
- 1 tsp cinnamon
- 1 egg/flax egg
- 1/4 cup milk
- 2 ripe bananas
- 1 tbsp almond butter
- 2 tbsp liquid coconut oil
For the frosting
- Cream cheese
- Greek yogurt
- Honey
- Lemon zest
Preparation
Mash the bananas using a fork.
In a mixing bowl, combine oat flour, white flour, rolled oats, coconut sugar, baking powder, ground cloves, cardamom, and cinnamon.
Add the mashed bananas, egg/flax egg, milk, almond butter, and liquid coconut oil to the dry ingredients. Mix well until all ingredients are incorporated.
Pour the batter into a greased cake pan.
Bake at 190°C/370°F for 20 minutes or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool completely.
For the frosting
In a separate bowl, mix cream cheese, Greek yogurt, honey, and lemon zest until smooth and well combined.
Once the cake has cooled, spread the lemon cream cheese frosting evenly over the top of the cake.
Optionally, garnish with additional lemon zest or cinnamon.
