Classic German No Bake Malakoff Cake

Ingredients

Cake

  • 1 packet vanilla pudding powder
  • 500 ml milk
  • 50 g almond flakes
  • 250 g soft butter
  • 100 g powdered sugar
  • 300 g ladyfingers
  • 10-15 tbsp rum

Decoration

  • 200 g heavy cream
  • 12 chocolate leaves

Preparation

  1. Cook vanilla pudding powder with milk according to package instructions

  2. Pour the pudding into a bowl

  3. Place plastic wrap directly on the surface of the pudding to prevent a skin from forming

  4. Let the pudding cool completely

  5. Meanwhile toast the almond flakes in a dry pan for a few minutes until golden

  6. Let the toasted almond flakes cool

  7. Mix the cooled pudding with soft butter and powdered sugar until smooth

  8. Line the bottom of a 22cm springform pan with ladyfingers

  9. Soak the ladyfingers with 5-7 tablespoons of rum

  10. Spread slightly less than half of the cream over the ladyfingers and smooth the surface

  11. Add a second layer of ladyfingers and soak with rum

  12. Spread the remaining cream leaving about 2 tablespoons for the sides and smooth the top

  13. Refrigerate the cake for 30 minutes

  14. Whip the heavy cream until stiff peaks form

  15. Remove the side of the springform pan

  16. Spread the reserved 2 tablespoons of cream over the sides of the cake to seal any gaps

  17. Press the toasted almond flakes onto the sides of the cake

  18. Transfer the whipped cream to a piping bag fitted with a star tip

  19. Pipe 12 small rosettes around the top edge of the cake

  20. Decorate with chocolate leaves

  21. Refrigerate until serving

Tip

  1. For an alcohol-free version soak the ladyfingers in the same amount of coffee or milk instead of rum
