Gluten Free Vegan Banana Bread with Chocolate , Walnuts & Chia Seeds

Ingredients

  • 3 tbsp melted coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 100 ml soy milk or other vegan milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tbsp apple cider vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tsp vanilla⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 600 ml gluten free oat flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 4 tbsp chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1.5 tsp bicarbonate⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 0.5 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 100 ml chopped walnuts⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 4 tbsp dark chocolate chips or chopped dark chocolate⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tsp coconut oil for the cake tin⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp oat flour for the cake tin⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preparation

  1. Preheat oven to 180 C/350 F.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  2. Mix all the dry ingredients in a bowl.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  3. Mash the bananas in a separate bowl. Add the coconut oil and the other wet ingredients and mix with a spatula. Add the dry ingredients and stir, make sure there are no flour lumps.⠀⠀⠀⠀⠀⠀⠀⠀⠀

  4. Oil the cake tin and sprinkle with a little oat flour to prevent the cake from sticking (it doesn't have to be perfect!).⠀⠀⠀⠀⠀⠀⠀⠀⠀

  5. Pour in the batter and bake in the middle of the oven for ca 50 mins until golden brown and a tooth pick comes out dry.⠀
