Gluten Free Vegan Banana Bread with Chocolate , Walnuts & Chia Seeds
Ingredients
- 3 tbsp melted coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 100 ml soy milk or other vegan milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tbsp apple cider vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp vanilla⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 600 ml gluten free oat flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 4 tbsp chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1.5 tsp bicarbonate⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 0.5 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 100 ml chopped walnuts⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 4 tbsp dark chocolate chips or chopped dark chocolate⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp coconut oil for the cake tin⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp oat flour for the cake tin⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation
Preheat oven to 180 C/350 F.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mix all the dry ingredients in a bowl.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Mash the bananas in a separate bowl. Add the coconut oil and the other wet ingredients and mix with a spatula. Add the dry ingredients and stir, make sure there are no flour lumps.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Oil the cake tin and sprinkle with a little oat flour to prevent the cake from sticking (it doesn't have to be perfect!).⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour in the batter and bake in the middle of the oven for ca 50 mins until golden brown and a tooth pick comes out dry.⠀
