Mozzarella Baked Gnocchi
Ingredients
- tbsp olive oil
- 1 clove garlic chopped
- 250g gnocchi
- half a jar of tomato pasta sauce or passata
- 2 tbsp green pesto
- Handful of pitted kalamatta olives
- slices of mozzarella (could use vegan)
- grated cheese (could use vegan)
- salt and pepper
Preparation
Preheat the oven to 180oc and then heat the olive oil in a pan and once hot add the garlic
After a minute add in the pasta sauce and salt/ pepper and cook for around 5 mins on a medium heat
Add the pesto and olives and stir and cook for another few minutes
Meanwhile cook the gnocchi in a pan of salted water until it float to the top (around 3-5 mins)
Drain the gnocchi and add to the sauce
Pour into an oven proof dish and top with the cheeses
Bake for 8 minutes
Serve with rocket
