Mozzarella Baked Gnocchi

Ingredients

  • tbsp olive oil
  • 1 clove garlic chopped
  • 250g gnocchi
  • half a jar of tomato pasta sauce or passata
  • 2 tbsp green pesto
  • Handful of pitted kalamatta olives
  • slices of mozzarella (could use vegan)
  • grated cheese (could use vegan)
  • salt and pepper

Preparation

  1. Preheat the oven to 180oc and then heat the olive oil in a pan and once hot add the garlic

  2. After a minute add in the pasta sauce and salt/ pepper and cook for around 5 mins on a medium heat

  3. Add the pesto and olives and stir and cook for another few minutes

  4. Meanwhile cook the gnocchi in a pan of salted water until it float to the top (around 3-5 mins)

  5. Drain the gnocchi and add to the sauce

  6. Pour into an oven proof dish and top with the cheeses

  7. Bake for 8 minutes

  8. Serve with rocket
