Afc - Afelia's Fried Chicken
Ingredients
- 700-900g chicken breasts, cut into 6cm wide strips
- 3 cups homemade/Panko breadcrumbs
- 1 tbsp chilli flakes
- 2.5 tsp dried oregano
- 2 tsp garlic powder
- 2 tsp salt (adjust to taste)
- 1.5 tsp chilli powder
- 1.5 tsp paprika
- 1.5 tsp dried thyme
- 1 tsp sugar
- 1 tsp ground black pepper
- 1 cup plain flour, for dredging chicken
- 2 eggs, whisked
Preparation
In a large bowl, combine the breadcrumbs and spices. Mix together and set aside. Prepare a wide shallow bowl with 1 cup of plain flour and another bowl with whisked eggs.
Use a meat tenderizer or rolling pin to pound the chicken strips until they are flattened to a thickness of 0.5cm.
Dredge the chicken in plain flour, then dip it in the whisked eggs, and coat it with the seasoned breadcrumbs. Place the coated chicken on a flat surface until it's time to fry.
For maximum crunch, deep fry the chicken in hot oil for 2-3 minutes on each side until it is cooked through and golden. Alternatively, for healthier strips, drizzle them with oil and air fry at 180°C for 12-14 minutes OR place them on an oven tray and bake at 220°C/gas mark 7 for 15-20 minutes until the chicken is fully cooked and golden.
