Afc - Afelia's Fried Chicken

Ingredients

  • 700-900g chicken breasts, cut into 6cm wide strips
  • 3 cups homemade/Panko breadcrumbs
  • 1 tbsp chilli flakes
  • 2.5 tsp dried oregano
  • 2 tsp garlic powder
  • 2 tsp salt (adjust to taste)
  • 1.5 tsp chilli powder
  • 1.5 tsp paprika
  • 1.5 tsp dried thyme
  • 1 tsp sugar
  • 1 tsp ground black pepper
  • 1 cup plain flour, for dredging chicken
  • 2 eggs, whisked

Preparation

  1. In a large bowl, combine the breadcrumbs and spices. Mix together and set aside. Prepare a wide shallow bowl with 1 cup of plain flour and another bowl with whisked eggs.

  2. Use a meat tenderizer or rolling pin to pound the chicken strips until they are flattened to a thickness of 0.5cm.

  3. Dredge the chicken in plain flour, then dip it in the whisked eggs, and coat it with the seasoned breadcrumbs. Place the coated chicken on a flat surface until it's time to fry.

  4. For maximum crunch, deep fry the chicken in hot oil for 2-3 minutes on each side until it is cooked through and golden. Alternatively, for healthier strips, drizzle them with oil and air fry at 180°C for 12-14 minutes OR place them on an oven tray and bake at 220°C/gas mark 7 for 15-20 minutes until the chicken is fully cooked and golden.

  5. Enjoy the AFC - Afelia's Fried Chicken with chips, in a pita with salad and sauces of your choice, or cut the chicken into strips and toss them in a salad.
