Chicken Drumsticks Curry
Ingredients
- 100ml oil
- 3 medium onions, finely sliced
- 4 green chillies roughly chopped
- 5 cloves of garlic, crushed
- 1 small piece of ginger, crushed
- 1.5 tsp salt (adjust to taste)_
- 2 tsp curry powder
- 1.5 tsp cumin powder
- 1 tsp chilli powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- water as needed
- coriander to garnish
Preparation
Wash the chicken drumsticks, soak for 10 mins in hot water if they have skin on, this will help loosen any fine hairs/feathers and make it easier to clean
If you're using skinless just wash as normal
Drain in a colander and leave until needed
Heat the oil in a large saucepan, once hot add the sliced onions and chopped chillies
Brown onions for 8 - 10 mins
Next add the crushed ginger and garlic along with salt and cook for another 5 - 8 minutes until soft and translucent, add a splash of water if the onions seem dry
Once the onions are translucent, add the ground spices and saute for 2 - 3 mins
Add a splash more water to the masala and cook covered till you can see the oil has separated from the masala
Use a potato masher to break down the onions further
Now add in the washed drumsticks and coat with the masala
Cook covered over a medium heat (about 8 - 10 mins) till you can see juices start to flow from inside the drumsticks, this is an indication the chicken is cooking through on the inside
Top up with more water when you see this happening (add as much/little water depending on how loose you like the curry to be) and then boil on high heat for 10 mins
Garnish with coriander after removing from heat
Enjoy with rice, mash, chips or a flatbread of your choice!
