Garlic H E R B Chicken Kabobs

Ingredients

  • 2 chicken breasts
  • 1 zucchini
  • 1 small red onion
  • 2 bell peppers
  • 3 garlic cloves minced
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp + 1 tsp italian seasoning
  • salt + pepper

Preparation

  1. Cut chicken into 1” cubes; combine oil, garlic, lemon juice, Italian seasoning, salt & pepper in a bowl; add chicken & toss; cover and refrigerate for a minimum of 1hr; soak wooden skewers for 20 mins in water; cut vegetables into chunks and toss with a drizzle of olive oil + 1 tsp Italian seasoning @simplyorganicfoods ; assemble kabobs alternating chicken and veggies; cook on the grill 4-5 mins per side until crispy
