Indian Spiced Roast

Ingredients

  • 1.5 kg chicken
  • 10 cloves garlic
  • Thumb-sized piece of ginger
  • Handful of fresh coriander
  • 1-2 green chillies (to taste)
  • 1 tsp turmeric
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 3 tablespoons ghee
  • Salt to taste
  • Stuffed sprouts
  • Cumin, chilli & honey carrots & parsnips
  • Ghee Roast Potatoes
  • Spiced stuffing
  • Cauliflower cheese
  • Yorkies (Yorkshire puddings)
  • Tarka spiced gravy

Preparation

  1. Blend garlic, ginger, fresh coriander, green chillies, turmeric, garam masala, ground cumin, ghee, and salt to form a smooth paste.

  2. Gently loosen the skin of the chicken and spread the paste under the skin, ensuring it's evenly distributed.

  3. Rub additional ghee over the top of the chicken skin.

  4. Allow the chicken to marinate overnight, if possible.

  5. Roast the marinated chicken as you would normally.

  6. Prepare stuffed sprouts, cumin, chilli & honey carrots & parsnips, ghee roast potatoes, spiced stuffing, cauliflower cheese, and Yorkies as separate components.

  7. Drizzle the roast chicken and side dishes with the tarka spiced gravy.

  8. For a vegetarian option, consider using roast stuffed butternut squash in place of chicken.
